You may use light or dark (whatever you prefer) roast to steep in the cold to room temperature for about 24 hours. Cold-brew tends to mute the acidic flavor of coffee ground, so in my opinion, a medium to dark roast will be a better choice for cold brew. 

You can also choose a light roast if you want, although the taste is nuttier and chocolatey compared to a dark or medium roast. 

Does instant coffee work for cold brew?

The answer is no. Cold-brew is brewing fresh grounds, however, instant coffee is already brewed. Unfortunately, you can’t re-brew already what has been brewed. 

You can dissolve instant coffee in cold water or milk. However, it will not taste like cold brew but instead iced coffee.
